Sometimes the ingredients we choose to use need a little sprucing up before we can actually consume them how we want too. In this case, the cherries we are using to make our Homemade Cherries Jubilee need to be flambéed (or set on fire) to bring them together perfectly with the Vanilla Ice Cream.
Be careful when trying to make this dish at home, its not overly hard to do, but if you have had a few drinks or aren’t familiar with the technique, when the fire does finally catch onto the alcohol, it may surprise you and we’d hate for you to get burned before you get to enjoy your hard work.
Enjoy this tonight when your kids get home from school or by yourself while everyone is gone, we’re sure you deserve some ice cream after a long hard weekend.

The Supreme Plate Spicy & Crispy Shrimp


Ingredients:
For the Sauce -
½ cup mayonnaise
1 TBS plus 1tsp Asian chili sauce (such as sambal oelek)
2 TBS honey
Kosher salt

For the Shrimp -
Vegetable oil, for frying
2 large eggs
¾ cup all-purpose flour
½ cup cornstarch
Kosher salt and freshly ground pepper
1 ¼ lb small / medium shrimp, (peeled and deveined)
Bibb or Hearts of Romaine lettuce leaves, for serving
Thinly sliced scallions, for garnish

Directions:
Make the sauce -  Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.

Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees. 

Meanwhile, whisk the eggs in a shallow bowl.
Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.

Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten 
eggs, then return to the flour mixture, turning to form a thick crust.

Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature.

Transfer to a paper-towel-lined plate with a slotted spoon.

Toss the shrimp with the prepared sauce.
Arrange the lettuce in a shallow serving bowl or on individual plates.
Top with the shrimp and garnish with scallions.



ROTD: Steak Taco Salad


Going into the Fall / Winter seasons, after such a long hot & grueling Summer can be tough for many people. After months of starving ourselves to keep those beach and poolside bodies in shape (yeah right like we starve ever over here) it seems like the winter months hit us fast & hard with all of the fattening dishes we just love to eat.
Much like the animals we take care of, most of us start to put on that “Winter Coat” that we always find ourselves trying to frantically lose prior to Summers arrival next year.

This Steak Taco Salad recipe was taught to me (yes taught for I was not into salads at all prior to making a few very special friends) and has been track tested and proven time & time again at our various backyard BBQs & functions.  

Don’t let the list of ingredients scare you, most of these things you will most likely already have in your home. This light & healthy Salad pulls together quicker than you can imagine, once you have your taco bowl shells and grilled the steak, your in the final stretch of the race.
Full of great flavors, invigorating ingredients (nothing that will make you feel sluggish or in need of a nap after eating,) this hearty dish is the prefect way to say farewell to Summer and the ultimate way to welcome Fall.

The Animal Style Cheeseburger, Made At Home

So National Cheeseburger Day was the other day and we got a few emails from various states asking us what or who we thought had the best hamburgers...

Answering a question such as who has the best burger to me, Chef Cheeba is impossible because I was raised eating burgers and everyone’s approach to them is drastically different. Up until recent, In & Out Burger was only in California, so the rest of the Nation for the most part had yet to have tasted an Animal Style Burger (mind you, everyone we have ever taken to In & Out has fallen in love with them.) 

We are not saying that In & Out has the best burgers at all, but once you have tried this delicious combination of beef, onions, tomatoes and special sauce all mixed together you will never go back to making yourself a regular burger ever again.

National Cheeseburger Day - Breakfast of Champions


Classic Recipe of The Day: Black Bean Hamburgers


Today is national Cheeseburger Day. We know that many people out there are cutting meat, especially red meat out of their diets and we didn’t want anyone to feel left out on such a glorious holiday. All across the Nation, the Hamburger is finding itself as the shining star on the menu once again and not much could please us more than that (ok some Peace on Earth might be nice, but we wont hold our breath.)

This recipe uses black beans instead of the typical beef or turkey and a few dashes of some good ol Tabasco to pull it together. Lately we have been omitting the Tabasco and using a really spicy island blend we found while traveling in St. Maarten so if you would like to really change up the flavors and spice levels of things, try out your favorite sauce and make this recipe your own, no one says these things are written in stone somewhere.

Enjoy National Cheeseburger Day!

Ingredients:
2 (14oz) Cans Black Beans (drained)
3 TBS Mayonnaise
1 tsp Kosher Salt
½ Cup Bread Crumbs (this recipe uses roasted garlic)
2 tsp Ground Cumin
½ tsp Smoked Paprika
1 tsp Cayenne pepper
2 TBS TABASCO, Original Red
¼ cup Finely Chopped Cilantro
3 TBS Vegetable Oil
4 Hamburger Buns (these are great on a toasted onion bun)
Sides usually include: Sour Cream, Salsa, Lettuce, Sliced Tomatoes & mustard

Directions:
Place One can of beans in a food processor with the mayo, bread crumbs, cumin, oregano, cayenne, TABASCO and Kosher salt.
Pulse a few times until a coarse puree forms.
Transfer the puree to a bowl and stir in the Cilantro and remaining can of beans.

Form mixture into 4 patties and place on a plate covered with saran wrap in the fridge for about 1 hour.

Heat vegetable oil in a heavy skillet over medium / high heat.
Cook the burgers until the outsides are browned, turning once about 5 - 8 mins total.
Garnish with whatever you like even double stack the patties and make it a black bean double double, animal style.
Serve on toasted buns.

Spicy Tomatillo Guacamole


Guacamole in Southern California can be found in thousands of places, so needless to say there are thousands upon thousands of variations that can turn up when thumbing thru recipes in a cookbook or online. This Spicy & Creamy Tomatillo Guacamole recipe incorporates the deep flavors of a few Tomatillos and the spice from 2 small peppers to bring about something different than your used too.
With today being National Guacamole Day (Sept. 16th) and with the Sun shining as bright as it is, I do believe that today is the perfect day to fire up the grill, make a few bowls of this good green Guac and get our complete lounge on outback. 
Yeah we know that Summer is supposed to be over, but in our neck of the woods it has still been in the hundreds this entire week, so we are going to take advantage as best as we can.

Growing up I was a milk fiend. I could drink a gallon a day if left to my own vices, the stuff was like crack to me. I would drink milk with damn near any meal (yeah I kept it real Kosher as a kid you can tell) and to this day still drink quite a bit of milk. 

The thing is, you just cant buy any brand of milk because often-times it is full of garbage hormones, drugs and steroids. I like to purchase Milk from reputable stores and from even more reputable brands. Spend a little time having a few taste tests between brands and see if you can tell the difference in what your buying. Well today is National Milk Day and with that we give you the Sweet & Salty Chocolate Milkshake. 

Combining sweet homemade Chocolate Syrup with a dash of Kosher Salt and Milk together will provide you with such a different tasting Shake, you will be truly grateful you tried this recipe out. For those that are truly skilled, bust out the Arbuelita chocolate and make a sauce from that, now that’s the business.

Heres a spicy corn salsa recipe that pulls together quickly & goes good with most grilled meats and fish, especially alongside a few strong drinks. The Supreme Plate Cajun Dry Rub


As crucial to cooking as heat itself, a good rub can completely change the way your guests look at the proteins they are consuming in mass amounts. No one should be forced to tolerate an unseasoned piece of steak on their plate, it is just uncivilized to say the least. But with a bit of The Supreme Plate Cajun Dry Rub, any good dish can be transformed into “something spectacular,” just take our word for it.
Once blended together this little gem of a mixture can stand in a cool dry place, closed tightly of course, for about 2 months.

The Supreme Plate Cajun Dry Rub:
¼ cup firmly packed light brown sugar
2 TBS dried oregano
2 TBS dried parsley
2 TBS granulated garlic
2 TBS onion powder
2 TBS sweet paprika
1 TBS dried thyme
1 TBS freshly ground black pepper
2 tsp kosher salt
1 tsp celery salt
1 tsp freshly ground white pepper
¾ tsp cayenne pepper
3 bay leaves, crumbled

Mix brown sugar, oregano, parsley, garlic, onion powder, paprika, thyme, black pepper, salt, celery salt, white pepper, cayenne, and bay leaves in a bowl. 
Pulse in a spice grinder in two batches to a medium-fine grind.
Seal in an airtight container & store in a cool, dry place for up to 2 months.
Makes 1 cup

Know-How: If your spice grinder doubles as your coffee grinder, make sure you clean it well after making this rub.
Place a handful of uncooked rice in the grinder, pulse to a powder, and wipe or brush the grinder clean.
The rice will absorb the flavors from spices left in the grinder so your morning cup of coffee won't taste like the great flavors of the Bayou.

Would you pay anywhere from $3,700 to $10,000 for a rare Densuke Watermelon? Grown only in Japan, these rare watermelons come with a solid black, very smooth skin are sold only via auction. Considering the fact that fresh fruit is really expensive in Japan, if these could be produced in the United States, would the price for them drop immensely? 

Normal watermelons sell for around $30 in Japan and the famous square watermelons can go for up to a few hundred dollars.
Even though this may sound like an insane amount of money to spend on some fruit, think about the fact that a Yubari Melon, once sold in Japan for $12,500.00 US.
Now that is some luxurious eating.
