Cherries Jubilee Made At Home

Cherries Jubilee Made At Home.
Sometimes the ingredients we choose to use need a little sprucing up before we can actually consume them how we want too. In this case, the cherries we are using to make our Homemade Cherries Jubilee need to be flambéed (or set on fire) to bring them together perfectly with the Vanilla Ice Cream.
Be careful when trying to make this dish at home, its not overly hard to do, but if you have had a few drinks or aren’t familiar with the technique, when the fire does finally catch onto the alcohol, it may surprise you and we’d hate for you to get burned before you get to enjoy your hard work.
Enjoy this tonight when your kids get home from school or by yourself while everyone is gone, we’re sure you deserve some ice cream after a long hard weekend.

The National Food Holidays of February

February is the shortest month of the year, which is no wonder why the government bestowed the honor of Black History Month upon it. But let us not get started on a tirade of how unfair our government treats people, as we all know they don’t care about us, but they do care about our dollars.
With that being said let us get down to business. February is a beautiful month, especially in Southern California. The weather is still a bit chilly by our standards, but the skies are clearer than they will be for the remainder of the year.  Take a few moments and enjoy the clean air, the crisp views of your city and plan out a vacation for yourself. If you’re a hard worker, you deserve to have a moment of peace in your life and with the right planning, the right food and some perfect company, you just might be able to make that happen.

Homemade Funnel Cake w/ Wine Syrup

Today is National Pastry Day. Some people because of their diets have come to loathe and detest pastries, but I must ask what have they ever done to you? I mean honestly who doesn’t like to hit up the Summer fair and get themselves a Funnel Cake or some sort of oversized sweet treat that should suffice any carb cravings for the year.  This recipe resembles a Funnel Cake to be honest you just didn’t have the joy of paying $11.00 for it.
I know we just had Thanksgiving and many of us are trying to eat light for the remainder of the year, well if that is the case, then this recipe isn’t for you, at least not right now it isn’t (but save it for later.)
This recipe pulls together in less than 30 minutes, is easy to clean up and is the perfect after dinner treat to snack on while consuming strong libations such as a Whiskey neat or a traditional High Ball.

Enjoy!

Ingredients
For the Syrup:
2 cups dry red wine
¾ cup sugar
1 cinnamon stick
2 whole cloves
2 strips orange zest
1 bay leaf

For the Pastries:
1 ¼ cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 large egg, lightly beaten
Grated zest of 2 oranges
2 TBS fresh orange juice
Vegetable oil, for frying Confectioners' sugar, for dusting
1 cup pomegranate seeds

Directions:

Make the syrup:
Bring the wine, sugar, cinnamon stick, cloves, orange zest and bay leaf to a simmer in a saucepan over medium-high heat, stirring; cook until reduced to 3/4 cup, about 15 minutes.
Let cool completely.
Discard the bay leaf.

Make the pastries:
Whisk the flour, baking powder and salt in a bowl.
Add 1/2 cup water, the egg, orange zest and juice and whisk until just combined.
Transfer the batter to a plastic squeeze bottle.

Heat 1 1/2 inches vegetable oil in a shallow pot over medium heat until a deep-fry thermometer registers 380 degrees F.
Squeeze the batter into the oil into 2-inch rounds; fry, turning once, until puffed and golden, 1 to 2 minutes.
Drain on paper towels.
Dust with confectioners' sugar and top with pomegranate seeds and wine syrup.

Peach Fritters w/ Orange Glaze

Nothing completes a meal like Fritters. I mean it may sound like a foreign concept to some, but having a warm bit of doughy goodness of any sort is a great sidekick to almost every meal.
If you are looking for the perfect accroutrement to either a meal weather it be a perfectly grilled piece of fish or chicken breast or you need something to spruce up that freshly bought ice cream you’ve been looking for an excuse to eat then look no further.

These Peach Fritters and Orange Glaze are what you need to be making next time you have a few friends over instead of that boring loaf of garlic bread you yanked out of the freezer department months ago.

Besides, today is National Fritter Day and what better way to celebrate with something sweet and a few strong drinks. I am sure as we speak a few strong drinks will make your day better, (that is unless you’re a school bus driver.)

Enjoy!

Recipe Of The Day: California Style Roasted Oysters

Today being National Oyster Day we wanted to deliver a simple and delicious recipe that wont have you standing over the stove or a BBQ all day.

I know many people out there are scared of oysters because they don’t know how to open them, prepare them or eat them. But have no fear, if I can be taught to do it and you have a bit of patience you can do it to.
Patience and a few key ingredients found in most kitchens will have you quickly impressing everyone with these supposedly libido enhancing bad boys.

Let us throw a few facts out there, first off Oysters should never smell fishy, should never be purchased if they are cracked or chipped to the point you can see inside them and should never be eaten if they have been left out in the sun or a warm room.

For best results buy your Oysters the night before or the day of needing them, wash them in cool water and keep them on ice in the fridge until they are ready to be used.

This recipe pulls together pretty quickly and packs more flavor into a single bite than any Fish Filet could ever do for you.
It’s Friday, so live a little and try something different this evening. I promise you, if you take your time with this dish right here, everyone’s creative juices flowing and your going to be the hit of evening.

Enjoy!

Recipe Of The Day: Fried Catfish Tacos w/ Chipotle Cabbage Slaw

August has arrived and with that comes a great month long Food Holiday known as National Catfish Month.

I myself am a firm believer that almost anything fried tastes good and Catfish is by far no exception to that rule. One of the greatest things about Summertime growing up was the smell of Catfish being fried by one of my friends parents every single weekend. This recipe also brings a little heat to the table with the Chipotle Cabbage Slaw.

Im not a big lover of coleslaw to be honest, but this version doesn’t have such an overpowering Mayo taste and with the chipotle /adobo combo it really plays well alongside the Catfish Tacos.
Enjoy this with a cold beer or a huge Hurricane.
