The Food Holidays of June 2013

The month of June, in the great State of California is a significant thing. The Sun and all of the wonders that grow underneath it are in full bloom come this time of year. Pools, beaches and amusement parks become jam packed with people from all over the World, looking for a cool way to escape the heat so do your friends a favor, if you own a pool don't be that guy who won't let anyone use it. Most importantly let us not forget the greatest offerings Summer brings our way, BBQs & Beach Ready Bodies.

Now is the time of year that people are working hard (or hardly working depending on who you run with) to display their best grilling & cocktail making skills (or consuming skills for that matter.) The start of June, marks a great time to go out and start hitting the Farmers Markets in your area in search of the freshest fruits, veggies and flowers that you can grow at your own home.

With that being said, let us lift our glasses and toast to the wonders of Summer.

Recipe Of The Day: Seafood Paella

Springtime in our test kitchen calls for plenty of seafood. Lately we have been fielding lots of recipe requests from our readers (please keep em coming!!!) for various light meals that can be prepared during the week. As well as those great requests for meals to surprise a loved one with a gourmet dinner that will really knock their socks off (or at least help you get closer to knockin’ their boots out of shape.) Today we wanted to reach back and showcase one of our insanely deep flavored but incredibly easy to pull off dishes, Seafood Paella. Most all of these ingredients can be found at your local market so don’t worry about having to make twenty different stops before you can even get to work.
Enjoy!!!

Light & Easy, Lobster Po' Boy Sandwich

The taste of fresh seafood awakens my senses, almost to the point that I can never really get enough of it. Of course I won’t sit here and say I am the biggest seafood eating monster on the planet, because there are still a few things that I just wont or cant bring myself to consume (at least not without a bunch of strong drinks.) But Lobster, the lovable little non huggable creatures they are, well to me they can do no wrong. From serving them broiled with lemon and drawn butter to frying them up for a po’ boy sandwich it can be said, these babies are versatile.
Enough with the talking though and let us get down to the nitty gritty. Today we are showing you how to make a delicious Lobster Po’ Boy w/o frying it, so you don’t have to feel guilty or clean up an extra mess.
Get to cooking those lobsters so you can enjoy these sandwiches ASAP.

Valentine's Day Done Right, Right At Home. Bistecca Alla Fiorentina & Grilled Lobster Tails w/ Orange Balsamic Vinaigrette

Valentine’s Day Done Right, Right At Home. Bistecca Alla Fiorentina & Grilled Lobster Tails w/ Orange Balsamic Vinaigrette.

Today being Valentine’s Day, a lot of things change from what you would normally expect them to be. Restaurants see a lot of action over the next 24 – 48 hours simply because a lot of people know how hard their loved ones work and how much they deserve to be treated to an amazing meal outside of the house. That causes mayhem that a lot of usually try to avoid.

The aforementioned aside, there are also those of us who want to actually put some elbow grease into a meal to make something special that we wouldn’t have the time to do on the regular.
That being said, today we are going to help those of you out there who want that fabulous Surf & Turf dinner without even having to leave the house with our Recipe of the Day: Bistecca Alla Fiorentina (Steak Florentine or Porterhouse Steak) & Grilled Lobster Tail w/ Orange Balsamic Vinaigrette. This recipe is deadly simply because the aromas it kicks up, the mood it creates and the dexterity it shows someone has in the kitchen is just all around FLY!.

Enjoy this meal with a loved one over some strong libations. Its Valentine’s Day, everyone deserves some love.

Seafood Bisque w/ Homemade Croutons (Made Easy)

Today is National Seafood Bisque Day. Seafood Bisque is something that mystifies many people because of the deep rich and creamy flavors that come out of the dish. There is nothing like serving up a dish to your family and friends that sounds like it costs an arm & a leg and required hours of painstaking labor in the kitchen. A dish like this does wonders, especially when the weather continues to cool off across Nation.
With this version here you get all of the same hearty flavors at a fraction of the cost and time.
The key to this is to make sure you have all of your ingredients ready at one time, you will hate yourself if you have everything going and then realize you still need to remove the lobster or shrimp from their shells.
Serve this up alongside some warm Sourdough Bread and a cold glass of whatever tickles your fancy.

Enjoy.

Recipe Of The Day / National Lobster Thermidor Day

Today is National Lobster Thermidor Day. Ok so for most of the free world what the hell does that exactly mean? Let us give you a bit of a history lesson real fast, then we can get into just how delicious this dish is.

First off, Lobster Thermidor is a French dish consisting of a creamy mixture of cooked lobster meat, egg yolks, and cognac or brandy, stuffed into a lobster shell, and optionally served with an oven-browned cheese crust, typically Gruyère. The sauce must contain mustard (typically powdered mustard).

Lobster Thermidor was created in 1894 by Marie's, a Paris restaurant near the theatre Comédie Française, to honour the opening of the play Thermidor by Victorien Sardou. The play took its name from a summer month in the French Republican Calendar, during which the Thermidorian Reaction occurred, overthrowing Robespierre and ending the Reign of Terror

Due to expensive and extensive preparation involved, Lobster Thermidor is usually considered a recipe primarily for special occasions.
A related lobster recipe is Lobster Newberg.
