You ever hear someone say “I am sick of eating…” whatever they say it makes me think, that sometimes it isn’t the actual meal we get tired of eating, it is simply that we get tired of people making a dish the same way over and over without allowing a chance to impart some creativity.

The main thing people need to remember when stepping foot into any kitchen is, very few things are set in stone, so therefore have fun and try something new. This Almond & Red Pepper Roasted Salmon is something out of the ordinary for many people, so don’t be afraid to give it a try.

Before we fall fully into Fall and have to start bundling up (I know many places across the Nation are already feeling that freeze) we figured we’d celebrate National frappe Day with a little Homemade Mocha Frappe recipe. 
As we all grow older, many of us depend on certain vices to get us through the day and Coffee without a doubt has a strong hold on many of our lives. This refreshing little twist on what we commonly pay $3 to $8 dollars for at a store, can be made at home for next to nothing and will even taste better than that store bought junk, once you perfect how you like it.

In Recent News: Benihana of Beverly Hills Was Also Closed For Vermin Infestation



With a bit of a closer look into recent restaurant opening and closings we noticed that another popular spot for people to hit up (especially for special events or corporate lunches) was Benihana on La Cienaga Blvd in Beverly Hills, who had to be closed down from September 13th thru the 17th for Vermin Harborage and Vermin Infestation. 

Having problems of these nature plague many restaurants sometimes because of the surrounding businesses who happen to have poor cleaning habits. That being said it still should never get to the point where your spot has to be closed down by the city or state.

After reopening the management has refused to comment on the situation other than to say, “it has been handled.”


Roscoes (on Pico) Closed Twice in 2 Months for Health Violations



It is crazy to think that some of our favorite places to eat, may not take things seriously behind closed doors, meaning how in the hell could one of the most famous Chicken & Waffle spots in all of Los Angeles (Roscoes on Pico) close two times within two months for “Vermin Harborage & Vermin Infestation. Below are the dates they were closed and the LA Dept of Healths reasons for shutting them down. 
Roscoes makes outlandish amounts of cash every single day, from the regular locals and especially the "out of towners" who flock to this place, because they hope to see a star or be part of the Los Angeles atmosphere.
Looks like we are going to have to start hitting Roscoes in Pasadena, because they seem to be able to avoid these problems.

Korean Spiced Beef, Shiitake Mushrooms & Noodles


We used to frequent a few Korean spots a few years ago, but none of them could come close to a dish a good friend of ours used to make in South Orange County or San Clemente for those that really know the area. She used to have our friends house smelling like all sorts of goodness as soon as you stepped in the door. I was lucky enough to get her version of her Korean Spiced Beef & Noodles, something she said her mother used to cook for her and her brother when they were kids. We have been working on the dish for a few years and have changed just a few things to make it work for us, but none the less it is delicious and healthy.
The flavors of the beef, shiitake mushrooms and brown sugar, are absorbed by the noodles creating an amazingly light, yet filling meal.

Recipe Of The Day: Spicy Scallop Gratin


Being that October is National Seafood Month, we figured this dish was a perfect way to start off the weekend especially seeing as how it is Friday night and everyone needs a solid home-cooked meal every so often (more often than not, will keep you healthier and save you a fair amount of money also.)
Our Spicy Scallop Gratin is something you bust out on a date or for some special friends who deserve to eat only the best prepared with love and quality ingredients. Enjoy this dish wish some nice white wine or some blended cocktails alongside some Jasmine rice or couscous.

Spicy Scallop Gratin
Ingredients
½ cup fresh breadcrumbs
3 TBS extra-virgin olive oil
1 TBS chopped fresh parsley
Kosher salt
Pinch of saffron threads
1 ½ to 2 lbs large scallops (muscles removed), rinsed and patted dry
1 small onion, diced fine
2 carrots, diced fine
1 large clove garlic, chopped
¼ tsp smoked paprika
1 tsp Sriracha Sauce
¼ cup dry white wine
2 TBS unsalted butter

Directions:
Preheat the broiler. (If possible, position the broiler rack 3 inches from the heat.)
Mix the breadcrumbs, 1 TBS olive oil, the parsley and a pinch of salt in a small bowl.
Soak the saffron in a separate small bowl with 1 TBS water.
Heat 1 TBS olive oil in a large nonstick ovenproof skillet (preferably cast iron) over medium-high heat.
Add the scallops, season with salt and sear until golden, about 2 minutes.
Flip and cook 1 more minute; transfer to a plate (do not wipe out the skillet).
Heat the remaining 1 TBS olive oil in the skillet.
Add the onion and carrots, season with salt and cook until the onion is soft, about 4 minutes.
Add the garlic and paprika and stir until toasted, about 1 minute.
Add the wine, scrape up any browned bits and cook until the liquid is almost evaporated, about 1 minute.
Stir in 1 1/2 cups water, the saffron and soaking water, Sriracha Sauce and any juices from the plate of scallops.
Bring to a simmer and cook until about 1/4 inch of liquid remains, 8 to 10 minutes. Season with salt.
Remove the skillet from the heat and stir in the butter until melted.
Return the scallops to the skillet, transfer to the broiler and cook, rotating the skillet as needed, until the scallops are firm, 1 to 2 minutes.
Sprinkle the scallops with the breadcrumb mixture and continue to broil until browned, 1 to 2 more minutes, rotating as needed.

Recipe Of The Day: Spicy Broccoli, Cheddar & Red Potato Soup



Nothing heats up the soul or the body like a bowl of fresh Broccoli & Cheddar Soup. Even though it is still hotter than we would like it be outside, eventually the colder temperatures are going to take over leaving us all in need of something to warm us up besides a few strong libations. This soup is hearty and delicious and can even go with some great shredded chicken or even eaten out of good strong loaf of your favorite bread that has been hollowed out. Whatever you choose to do, this dish is a nice alternative to all of the BBQ, salads and fried foods we have been tearing through all Summer long.
