How To Eat Better (Without Realizing It)


By now we all know the importance of healthy eating, but making changes to your eating habits is usually easier said than done. If you’re a red meat and fried potatoes kind of eater, going cold turkey and switching to a salad-only diet probably won’t be effective. And even if you’re a usually healthy eater but have a weakness for chocolate, replacing all of your treats with fruit may not satisfy your sweet tooth.

Improving eating habits doesn’t have to mean a drastic switch in your diet, however. There are lots of ways to eat healthier, more nutritious and balanced meals without sacrificing the foods you crave.

Experiment with Cooking Methods
Oftentimes, a dish is unhealthy because of how it’s prepared, not necessarily because of what ingredients are in it. If you cook with a lot of oil or use frying as your go-to kitchen technique, try making the same dishes using different cooking methods. Oven bake traditionally fried foods like breaded chicken, fries and onion rings, and try roasting, baking poaching or grilling meats and vegetables.

Find Healthier Versions of “Junk” Foods
Just because you want to eat healthier doesn’t mean you’ll never get to enjoy your favorite junk foods again. Instead of cutting out fries, for instant, try baked sweet potato fries for a healthier, lower calorie option. Or choose whole grain popcorn instead of the variety that comes slathered in butter; pretty soon, your taste buds won’t even crave the “bad” stuff you liked before.

Substitute Vegetables
Cutting back on foods like red meat and starchy pastas is a common feature of healthier eating, but not everyone can give up goodness like burgers and macaroni so easily! Instead of cutting back on certain foods entirely, occasionally substitute veggies for the foods you’re cutting back on (but not every time!): cauliflower mac and cheese and portabella burgers are good examples of how substituting vegetables can still provide you with satisfying, indulgent meals.

Eat Seasonally
One easy way to trick yourself into eating healthier is to make it a goal to eat seasonally. Since good-for-you fruits and vegetables make up the majority of seasonal foods, making a point to go out and buy foods that are in season will automatically bring more nutrients and vitamins into your diet. You may even be exposed to new produce you never knew you liked before!

Season from Scratch
Instead of buying dressings and seasonings at the grocery store that tend to be high in sodium, calories or fats, try making your own at home. Salad dressings, taco seasoning and pasta sauces are all easy to make from the comfort of your own kitchen and will likely be much better for you—and better tasting—than anything you’d find at the supermarket.

The Food Holidays of January 2013

2013 looks to be “that year” for many people. The time has come for the public to take back their lives and return to what the true meaning of life is all about, helping those that are in need. 2012 saw many just as many tragedies as it did triumphs. The cold fact that people need to support each other and have each other’s backs, rings true now more than ever. Diet trends may come and go, but eating healthy should always be a high priority for us all.

An Alphabetical Guide To Healthy Eating.
As the warm days begin to dwindle and the cold weather months kick their calamity of sorts into high gear, it is imperative to remember the ABC’s of staying healthy, by eating the right foods & avoiding stress in your life.  The times have changed, people used to have to search for the latest diet craze to make themselves miserable in hopes of losing a few lbs or inches. These days, consumers looking to stay in shape have to search through what they are force-fed, everywhere they turn to figure out what is hype and what is reality (and trust us a lot of these new diets are just pure BS.)
With everyone labeling themselves as “Fitness Gurus” and “Lifestyle Coaches,” its plain to see that there are two simple facts that cannot be overlooked in regards to living a healthy lifestyle;
1. It (fitness) is a big business, so know who you are listening too before you start some crazy diet that may cause you sever harm &
2. Not every diet is geared to work for everyone, so a clear understanding as to what you should and should not be eating is crucial before getting started.

We’ve put together a quick list of super foods and foods that do super damage and hope that this will help to inform you a bit about foods that are great for you vs a diet that does nothing for you at all.


 A. Avocados -
Loaded with Vitamin E, these delicious fruits are full of healthy fatty oils that promote smooth muscle growth, are loaded with antioxidants and help to promote cell signaling.


B. Bananas -
Bananas are an excellent source of Vitamin B, soluble fiber and contain moderate amounts of Vitamin C, Manganese and Potassium. Along with a few other foods, consuming Bananas has shown to reduce the risk of colorectal cancer and in women breast cancer.

C. Cranberries -
Raw Cranberries have moderate levels of Vitamin C, Dietary Fiber as well as show increased abilities in helping to fight urinary tract infections in both men and women.  Cranberry Juice also has a high molecular weight that inhibits the formation of Plaque pathogens that cause tooth decay. Vegetarian ROTD: Roasted Cauliflower & Plum Tomatoes


Roasted Cauliflower & Plum Tomatoes

This is the perfect side dish for some Salmon & White Wine. It takes little to no time, which works well since fish usually takes the same or less to cook perfectly.
This works itself out in about a half hour or so.giving you just the right amount of time to sauté up some fish and pour up a few glasses of something for everyone to get the appetites going.
Enjoy!

Ingredients:
7 cups small Cauliflower florets
3 medium sized Plum Tomatoes
¼ cup Olive Oil
2 cloves Garlic, minced
1 ½ tsp Cumin Seeds
¼ tsp Tumeric
½ tsp Cayenne pepper
½ tsp Kosher Salt
cracked Black Pepper to taste
½ bunch Cilantro, chopped
juice from 1 Lemon

Directions
Preheat oven to 450°
Toss cauliflower florets and plum tomatoes with olive oil, minced garlic, cumin seeds, turmeric, cayenne, Kosher salt, and pepper to taste on a baking sheet. Roast in the oven, about 25 minutes.
Sprinkle with lemon juice and chopped cilantro.
Serves: 4

Ingredients
1 ½ cups strawberries, hulled and sliced

Pulse the flour, buttermilk, egg, vegetable oil, granulated sugar, baking powder, baking soda and salt in a blender until smooth.
Transfer to a bowl and stir in the cheesecake pieces, keeping them whole.

Coat a large nonstick skillet or griddle with cooking spray and heat over medium heat.
Working in batches, pour about 1/4 cup batter into the skillet for each pancake. Cook until bubbly on top, about 4 minutes, then flip and cook until the other side is golden brown, about 2 more minutes.

Transfer the finished pancakes to a baking sheet and keep warm in the oven. Serve the pancakes topped with the strawberry sauce; top with butter, confectioners' sugar or whipped cream, if desired.

Fresh Whipped Cream & Strawberries... (National Strawberries & Creme Day)


Today is National Strawberries & Cream Day, which works out perfectly for us. Ya see we love strawberries, we love cream and with the temperature reaching 80 before 10:00am we know its going to be a long hot day, so what better to eat to keep yourself cool?

Strawberries (which aren’t hard to grow in your own backyard) are healthy for you, loaded with vitamins, minerals, healthy lipids and amino acids. Strawberries also contain the naturally produced chemical fisetin, an antioxidant that helps prevent kidney failure, resulting from diabetes as well as has been used in Alzheimer’s  Disease studies.

Seared Tilapia w/ Lemon Asparagus & Spicy Mint Gremolata


Using quality equipment is key to creating great dishes. That is to say, you don’t always need to go out and purchase the most expensive piece of cooking equipment, but more importantly a piece that can withstand time and rigorous use. When cooking your Tilapia, make sure that your non stick skillet is very hot, this will ensure that only a minimal amount of oil is needed. Your fish for once doesn’t actually have to be swimming to be ok. By using a few different fresh herbs and the hints of citrus as a topping, the fish will pack the perfect amount of heart healthy nutrients as well as a some great flavors to either start or finish off the day.

Ingredients:
2 lb thin, tender asparagus, trimmed
3 TBS coarsely chopped mint leaves
1 small garlic clove, finely chopped
½ tsp finely grated lemon zest
Juice from 1 large Lemon
Few dashes of crushed red pepper flakes
2 tilapia fillets (around1 lb), halved
Kosher Salt and freshly ground black pepper
1 TBS extra virgin olive oil, plus 4 tsp oil for drizzling

Directions:
Put a steamer basket in a large pot over 1-inch of boiling salted water.
Add the asparagus; cover and steam until it is crisp-tender, 6 to 8 minutes.
After you remove the Asparagus dash with Kosher Salt, course ground black pepper & Lemon Juice to taste.

In a small dish, stir together the mint, garlic, lemon zest and pepper flakes, this makes a great condiment called a Gremolata, which also goes perfect atop of Carne Asada and things of the grilled nature.

Brush the tilapia with 1TBS oil; season with salt and pepper to taste.
Add 2 tilapia fillets to hot pan; cook, turning once, until opaque throughout, 5 to 7 minutes total.
Transfer to plates. Repeat with remaining tilapia.

Serve the tilapia with the asparagus; garnish with Gremolata mixture.
Drizzle the asparagus and fish with olive oil, if desired.

Recipe Of The Day: Shrimp & Cabbage Stir Fry


The warm weather is returning quickly here in Southern California and with that; pool-side hangouts, lots of libations and fresh seafood being served in abundance. 

For those of you out their in the World though who don’t have time for any of that fun nonsense, take a moment at the very least to treat yourself to a dish that pulls together quickly, tastes better than what you’ll find at the local corner spot and is Really Healthy.

Shrimp & Cabbage Stir Fry, is the type of dish one should master, simply to impress your guests and keep your repertoire up to par.
