The National Food Holidays of July 2013


July is an amazing month. The greatest thing about July is all of the BBQ’s that take place every weekend, with the 4th of July usually setting the tone for the kind of month you hope won’t end.
No matter where you live, now is the time to start thinking about BBQs, Beach parties, picnics, going hiking or camping and all around looking for some form of outdoor adventure.

While everyone is trying to stay slim and trim for that poolside look, I am out trying to get my drink and grub on, as should you. That doesn’t mean you have to party out of control, leaving a trail of mass destruction in your wake. Quite the opposite is what we actually preach over here, ya see we like to use the old adage “Play it cool” when it comes attending any kind of event. No one should want to be remembered as the jerk that pushed people into the pool, with cell phones in their pockets, nor should anyone want to be known as the guy who fell asleep, got sun burned beyond safety and made an ass of themselves at a recent shindig.

With 4th of July right around the corner, lets face it, someone’s gonna end up smelling like smoke (BBQ smoke that is,) strong libations and have a few spots of sauce on their clothes.
Remember that nothing ruins Summertime faster than an ugly attitude, so leave your sour faces at home and bring nothing but good times, good food, good vibes and most importantly, Good Judgement. Noting is better than being safe wherever you go.

The Ritz-Carlton, South Beach Honors The Miami Heats NBA Championship




MIAMI, FLORIDA – August 14, 2012-- With the Miami HEAT’s recent NBA championship win making summer in Miami hotter than ever, The Ritz-Carlton, South Beach is offering a way to cool down and enjoy a taste of their hometown team’s sweet victory with a limited-edition, ‘You Can’t Beat the HEAT’ dessert to benefit the Mourning Family Foundation.  The gourmet-style treat is offered as a special menu addition exclusively at the oceanfront hotel’s two restaurants, DiLido Beach Club and Bistro One LR, through December 31, 2012.

The Ritz-Carlton, South Beach Executive Pastry Chef Jason Morale carefully designed the decadent creation to best represent the HEAT’s star status and the residual excitement that continues to emanate throughout the city following their triumph. Presented in two pieces, the dessert duo features an orange-colored, mango flavored basketball on top of a thick layer of fudge cake surrounded by gold dusted mint chocolate crunchy, bite-sized pieces with a hint of mint. Accompanying the basketball is a martini glass filled with a flaming coconut crème brûlée, inspired by the HEAT’s team mascot Burnie, an anthropomorphic fireball.

The Mourning Family Foundation was established in 1997 by former HEAT basketball player and Olympic gold medalist turned philanthropist Alonzo Mourning, to aid in the development of children and families living in at-risk situations and provide support and services that enhance the lives of youth of promise. The cost of each ‘You Can’t Beat the HEAT’ dessert is $12 and all of the proceeds raised will go towards two of the foundation’s special children’s programs.
They will benefit the Overtown Youth Center, designed to inspire, empower, and enrich the lives of underprivileged children while teaching them to become positive contributing citizens; andHoney Shine, a mentoring program founded by Tracy Wilson Mourning, to encourage the balance of mind, body and soul in girls and women by providing nurturing experiences that enlighten their paths and empower their future.

National Creme Brulee Day


Desserts hold a special place in my heart. As a child growing up, I was without a doubt the pickiest eater in my family. Every meal basically revolved around whether or nor I wanted to eat something found on the menu, at the establishment of choice. But over time my family discovered a sure fire way to get me to act accordingly, and that came in the greatest form of payment known to mankind, bribery.

If I knew before hand that we were going to a place that had just one single dessert that I liked, most likely I would be a perfect angel the entire evening. One evening while visiting my Grandmother who lived just a stones throw away from the beach in San Clemente, I was introduced to something that would later play a small part in inspiring me to attend culinary school, Crème Brulee.

Crème Brulee, a wonderful dessert made of Crème Anglaise and Burnt Sugar, at the time to me was the most fascinating thing I had ever had the chance of eating. That dessert has long stuck with me and has been ordered on some of the most amazing nights of my life, where food has played a part in making wonderful memories.

Having introduced many of my friends to it over the years, I feel like each and every time I pass on the knowledge of such a delicious treats existence, I am tipping my hat in honor of my beautiful Grandmother who to this day, checks in to see if I am eating what I like and what makes me happy.
