Peach Fritters w/ Orange Glaze



Nothing completes a meal like Fritters. I mean it may sound like a foreign concept to some, but having a warm bit of doughy goodness of any sort is a great sidekick to almost every meal. 
If you are looking for the perfect accroutrement to either a meal weather it be a perfectly grilled piece of fish or chicken breast or you need something to spruce up that freshly bought ice cream you’ve been looking for an excuse to eat then look no further.

These Peach Fritters and Orange Glaze are what you need to be making next time you have a few friends over instead of that boring loaf of garlic bread you yanked out of the freezer department months ago.

Besides, today is National Fritter Day and what better way to celebrate with something sweet and a few strong drinks. I am sure as we speak a few strong drinks will make your day better, (that is unless you’re a school bus driver.)

Ingredients:
1 cup cornmeal
2 TBS sugar

½ tsp Kosher salt
1 can peach halves in syrup, drained
¾ cup buttermilk
1 large egg
2 TBS melted butter
½ tsp almond extract
Confectioners' sugar, for garnish
Orange Glaze, recipe follows

Directions:
Heat deep-fryer to 350 degrees F.
Combine cornmeal, flour, sugar, and salt in a large bowl.
Remove 3 peach halves from can and cut into small cubes.
In a small bowl, combine buttermilk, eggs, butter, cubed peaches, and almond extract
Add wet mixture to dry and stir well until combined.
Using a small ice cream scoop, drop batter into the hot oil.
Fry for 1 minute per side.
Flip halfway through cooking before it's too heavy to turn.
Remove to a paper towel lined sheet tray.
Sprinkle immediately with confectioners' sugar.
Place on platter and serve with Orange Glaze.

Orange Glaze Ingredients:
2 cups confectioners' sugar
¼ cup fresh orange juice

Directions:
In a large bowl add the confectioners' sugar and drizzle in the orange juice while whisking.
