Recipe Of The Day: BBQ Beef Shortribs



To start off the week, I figred why not make something that seems like it should take forever but only takes 30 mins with proper set up work.
A lot of times people truly don't realize how much stress can relieved by simply having all of your items already Mise en Place (put in place.)
The great thing about these ribs is, they can be put in their marinade and left for a day until ready to use. Beef Shortribs are a great full flavor meat that go perfectly with an uncountable amount of side dishes.
To keep it light and simple try making these Shortribs and eating them alongside a salad with pears, apples, walnuts and bleu cheese crumbles.

Ingredients:
2 TBS Toasted Sesame Seeds (plus more for sprinkling)
4 Garlic Cloves (pressed & diced)
1 Cup Soy Sauce
2 TBS Sherry
2 TBS Honey
2 TBS Sesame Oil
2 TBS Water
2 tsp Fresh Ginger (finely grated)
1/2 Cup Scallions (green & white parts mixed, plus more for sprinkling)
2 TBS Red Chili Flakes
6 - 7 LBS Beef Short Ribs (cut into thin pieces about 2 1/2 inches long)

Directions:
Grind the sesame seeds in a coffee grinder until finely ground.
Place the sesame seeds in a Large Freezer Ziploc bag (this makes for easy cleanup later)
Add garlic, soy sauce, sherry, honey, sesame oil, water, ginger, scallions and red chili flakes to the bag and mix thoroughly.
Place Short-Ribs in the bag and toss around to coat ribs. Place bag in refrigerator and let marinate for at least 2 hours.

Preheat your grill to medium / high heat.
Remove ribs from marinade and grill on both sides until golden brown and crispy, about 15 mins total.
Reduce the heat of the grill, close the cover and grill ribs until they are tender (usually another 15 mins depending on grill size and heat)
Remove ribs from grill, place them on a platter and sprinkle with remaining green onions and sesame seeds.
