Recipe Of The Day: Roasted Yukon Gold Potatoes

There is nothing like crispy golden roasted potatoes. This time of year just calls for them, but the sad fact is that a lot of people do not know how easy they are to make.
I used my Grandmothers old school recipe and enhanced it by adding a bit of cayenne and paprika to the mix.

Ingredients:
2 pounds Yukon Gold potatoes, peeled and quartered
Salt and freshly ground black pepper
2 TBS extra-virgin olive oil
1 TBS cayenne pepper
2 TBS dried onion
1 TBS smoked paprika
2 TBS chopped parsley leaves

Directions:
Preheat oven to 400 degrees F.

Put the potatoes on a baking sheet. Season with salt and pepper.
Drizzle the olive oil and sprinkle the parsley, cayenne, paprika and dried onion.
Toss the potatoes to coat.
Roast in the oven, until golden and crispy on the outside, tender and cooked through on the inside, about 30 minutes.
